• Thinly slice button mushrooms and garlic. Pick thyme leaves. Slice lemon into wedges.
• In a large frying pan, heat a drizzle of olive oil and the butter over medium-high heat. Add mushrooms and cook until browned and softened, 8-10 minutes.
• Add garlic and thyme and cook until fragrant, 1 minute. • Remove from heat, then add a generous squeeze of lemon juice. Season generously with salt and pepper.
• Transfer to garlic-thyme mushrooms to a serving plate. Serve with any remaining lemon wedges. Enjoy!
