Tender, juicy steak is topped with a herby salsa verde, best enjoyed with a side of queso and crunchy corn chips for dipping. The hardest part about this tasty collection of dishes is what to dig into first!

Cooking Steps

• See ‘Top Steak Tips’! (below left) • Preheat oven to 240ºC/220ºC fan-forced. • Cut potato into fries. • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. Bake until tender, 20-25 minutes.

• Meanwhile, halve cherry tomatoes (see ingredients). • Finely chop garlic. • Thinly slice radish.

• In a medium bowl, combine cherry tomatoes, radish, and a drizzle of olive oil, then season with salt and pepper. Set aside.

• Season beefrump with salt and pepper. • In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef, for 2 minutes each side for medium-rare, or until cooked to your liking. • Transfer to a plate to rest.

• While the steak is resting, heat the butter in a medium saucepan over medium heat. • SPICY! You may find the spice blend hot! Add less if you're sensitive to heat. Cook garlic, Mexican Fiesta spice blend (see ingredients) and the plain flour until fragrant, 1 minute. • Add the milk and cream (see ingredients) and cook until thickened, 1-2 minutes. • Remove from heat, then add grated Parmesan cheese and stir to combine. • Transfer queso to a bowl.

• Slice steak and drizzle with salsa verde. • Bring everything to the table to serve. Help yourself to the steak, cherry tomato salsa, queso and corn chips. Enjoy!
