• Heat frying pan over medium-high heat with enough olive oil to coat base of pan. Cook chicken until golden, 3-4 mins each side. Season • Meanwhile, halve ciabatta. Toast or grill to your liking

• Slice avocado in half, scoop flesh out and slice • Slice tomato and cucumber • In a bowl, combine sriracha and aioli

• In a second bowl, combine coslettuce mix, cucumber, dressing and pepitas. Season • Spread ciabatta with sriracha aioli, top with avocado, tomato and chicken. Serve with salad
