Cooking Steps

Cook the salmon
1

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. 
• Pat salmon dry with a paper towel and season both sides with salt and 
pepper.
• When the pan is hot, cook salmon, skin-side down first, until just cooked 
through, 2-4 minutes each side. 
• In the last minute, add sweet soy seasoning, gently turning salmon to coat.  


TIP: Patting the skin dry helps it crisp up in the pan!

• Meanwhile, thinly slice radish. 
• Thinly slice cucumber (see ingredients) into half-moons. 
• Drain pineapple slices and roughly chop. 
• Slice lemon into wedges. 

Make the slaw

• Microwave basmati rice until steaming, 90 seconds.
• In a medium bowl, combine shredded cabbage mix, radish and ponzu 
sauce. Season to taste with salt and pepper.
• In a second medium bowl, combine pineapple and a squeeze of lemon. 

Finish & serve

• Divide rice between bowls. 
• Top with salmon, ponzu slaw, cucumber and zesty pineapple salsa.
• Drizzle over lime & chilli mayo and sprinkle over sesame seeds to  
serve. Enjoy!
