Cooking Steps

Bake the fries

  • Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
  • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Pickle the cucumber

  • Meanwhile, finely chop cucumber.
  • In a medium bowl, combine the vinegar and a good pinch of sugar and salt.
  • Add cucumber to pickling liquid. Add enough water to just cover cucumber. Set aside.

TIP: Chopping the cucumber into small chunks helps it pickle faster!

  • Thinly slice onion and spring onion.
  • Roughly chop tomato.
Caramelise the onion

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook onion, stirring regularly until softened, 5-6 minutes.
  • Reduce heat to medium. Add the balsamic vinegar, brown sugar, a splash of water and mix well. Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl and set aside.
Cook the pork

  • When the onion is done, wipe out frying pan and return to high heat with a drizzle of olive oil.
  • Cook pork mince and Kiwi spice blend, breaking up with a spoon, until just browned and fragrant, 4-5 minutes.
  • Sprinkle shredded cheddar cheese over pork and cover with a lid so cheese melts, 1-2 minutes.
Finish & serve

  • Drain pickled cucumber.
  • Divide fries between plates. Top with cheeseburger-style pork, pickled cucumber and tomato. Sprinkle over mixed sesame seeds and spring onion. 
  • SPICY! Use less hot sauce if you’re sensitive to 
    heat! Drizzle over garlic aioli and hot sauce to 
    serve. Enjoy!
