- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, finely chop cucumber.
- In a medium bowl, combine the vinegar and a good pinch of sugar and salt.
- Add cucumber to pickling liquid. Add enough water to just cover cucumber. Set aside.
TIP: Chopping the cucumber into small chunks helps it pickle faster!
- Thinly slice onion and spring onion.
- Roughly chop tomato.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook onion, stirring regularly until softened, 5-6 minutes.
- Reduce heat to medium. Add the balsamic vinegar, brown sugar, a splash of water and mix well. Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl and set aside.
- When the onion is done, wipe out frying pan and return to high heat with a drizzle of olive oil.
- Cook pork mince and Kiwi spice blend, breaking up with a spoon, until just browned and fragrant, 4-5 minutes.
- Sprinkle shredded cheddar cheese over pork and cover with a lid so cheese melts, 1-2 minutes.
- Drain pickled cucumber.
- Divide fries between plates. Top with cheeseburger-style pork, pickled cucumber and tomato. Sprinkle over mixed sesame seeds and spring onion.
- SPICY! Use less hot sauce if you’re sensitive to
heat! Drizzle over garlic aioli and hot sauce to
