Cooking Steps

Get prepped

• Preheat oven to 220°C/200°C fan-forced.
• Roughly chop capsicum. 
• Slice onion into thick wedges.
• Peel and cut kūmara into large chunks.  

Start the traybake

• Add veggies to a lined oven tray. 
• Drizzle with olive oil and season to taste with salt and pepper.  

Add the chicken

  • Add veggies to an oven tray lined with baking paper. Drizzle with olive oil and season.
  • Add chicken breast, Mexican fiesta spice blend and a drizzle of olive oil. Then bake until golden and cooked through, 25-30 minutes.

TIP: If your oven tray is crowded, divide between two trays.
TIP: Chicken is cooked through when it is no longer pink inside.

Finish & serve

  • Slice avocado in half, scoop out flesh and roughly chop. 
  • Divide chicken fajita & vibrant veg bake between bowls. Top with avocado and sour cream. Tear over coriander to serve. Enjoy!
