Cooking Steps

  • In a small heatproof bowl, microwave the butter in 10 second bursts, until melted. In a medium bowl, whisk the eggs.
  • In a large bowl, combine cornflour, 1 tbsp icing sugar, the flour and milk and whisk until combined.
  • Slowly add the beaten eggs and melted butter and whisk until combined.

  • Heat a non-stick frying pan over medium heat with a drizzle of olive oil.
  • When oil is hot, pour 1/4 cup of pancake batter into the middle of the pan, then swirl to cover the base in a thin layer. Cook until golden and small bubbles form on the surface, 2-3 minutes.
  • Remove from pan and transfer to a plate to cool (no need to flip). Repeat with remaining batter. 

TIP: Use some butter for frying if preferred.

  • When pancakes have cooled, drain tinned mango, then cut into large chunks.
  • Using electric beaters, whisk cream, vanilla-flavoured essence and 1 tbsp icing sugar in a jug or second large bowl until soft peaks form and almost double in size, 1-2 minutes.

TIP:  If you don’t have electric beaters, use a hand whisk and whisk for 3-4 minutes!

  • Lay one pancake at a time on a chopping board (shiny side facing down). Spoon a dollop of cream mixture into the centre and top with a piece of mango. 
  • Fold in all four sides to form a pillow and place seam-side down on a serving plate. Repeat with remaining pancakes.
  • Lightly dust with some icing sugar to serve. Enjoy!
