
Warm up those BBQs and dig into this stunning surf & turf featuring sweet prawns and hearty beef rump. The addition of a simple yet impressive garlic-chilli butter will add a kick of heat to really make the flavours of this feast sing!

Beef Rump

Garlic Paste

Chilli Flakes

• Preheat BBQ to high heat. Slice lemon into wedges.
• In a small heatproof bowl, microwave the butter in 10 second bursts, until melted.
• To the butter, add garlic paste and a pinch of chilli flakes. Season with salt and pepper.
• To a medium bowl, add rump steaks and a drizzle of olive oil. Season and toss to coat.

• When BBQ is hot, grill beef rump, turning, for 6-10 minutes for medium-rare or until cooked to your liking. In the last minute of cook time, brush both sides with garlic butter. Transfer to a plate and leave to rest for 5 minutes.
No BBQ? In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef rump, turning, for 5-9 minutes for medium-rare or until cooked to your liking.

• When BBQ is hot, grill prawns until pink and starting to curl up, 2-3 minutes each side. In the last minute of cook time, brush both sides with garlic butter.
No BBQ? In a large frying pan, heat a drizzle of olive oil over a medium-high heat. Cook prawns, tossing, until pink and starting to curl up, 3-4 minutes.

• Thinly slice beef rump. Serve with prawns and a good squeeze of lemon juice. Enjoy!
