• Zest lemon to get a good pinch.
• In a shallow bowl, combine sweet golden spice blend, lemon zest and the
white sugar. Set aside.
• Heat a large frying pan over medium-high heat. Toast flaked almonds,
tossing, until golden, 2-3 minutes.

• In a large shallow bowl or dish, whisk the egg, vanilla-flavoured essence,
and cream (see ingredients) until well combined.
• Halve croissants, then add egg mixture, gently turning to coat evenly.
• Set aside to soak for 10 minutes.

• Heat a large frying pan over medium-high heat with a knob of the butter and
a drizzle of olive oil.
• When the butter is melted and oil is hot, gently remove croissant halves
from egg mixture.
• Cook in batches until lightly browned and set, 2-4 minutes each side.
• Transfer cooked croissants to spiced sugar mixture and turn to lightly coat.
TIP: Add more butter between batches if needed.

• Divide spiced croissant French toast between plates.
• Fill with natural yoghurt and berry compote.
• Top with toasted almonds to serve. Enjoy!
