Cooking Steps

Cook the rice

  • Boil the kettle. Half-fill a medium saucepan with the boiling water.
  • Add basmati rice and a pinch of salt and cook, uncovered, over high heat until tender, 12 minutes. Drain.
Get prepped

  • Meanwhile, thinly slice cucumber into rounds.
  • Halve cherry tomatoes.
  • Finely chop garlic.
  • Cut chicken breast into 2cm chunks. 
Fry the eggs

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes.
  • Transfer to a plate and cover to keep warm.
Cook the chicken

  • Return frying pan to high heat with a drizzle of olive oil.
  • When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes.
  • Add sweet soy seasoning and garlic and cook until fragrant, 1 minute. TIP: Chicken is cooked through when it is no longer pink in the middle.
Bring it all together

  • Add cooked rice and cook, tossing, until combined, 1-2 minutes.
  • Add kecap manis, fish sauce & rice vinegar mix, tossing to coat, 1 minute.
Finish & serve

  • Divide chicken nasi goreng, cucumber and cherry tomatoes between bowls.
  • SPICY! The sambal is slightly spicy, use less if you're sensitive to heat. Top with fried eggs and sambal. Enjoy!
