Crispy potato fries are piled high with bold, spiced Tex-Mex pork mince, juicy tomato, crisp cos and creamy avo - a chuck wagon of flavour worth two-steppin' to the table for. Finish with a generous shower of melty Cheddar and a drizzle of smokey aioli and yeehaw, you've got yourself a loaded fries situation that'd make any cowboy proud.

Cooking Steps

Bake the fries
1

• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into fries.
• Place fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
• Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Char the onion
2

• Meanwhile, thinly slice onion.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook onion until tender, 6-8 minutes. Transfer to a small bowl and cover to keep warm.

Get prepped
3
  • Roughly chop tomato.
  • Finely shred cos lettuce.
  • Slice avocado in half, scoop out flesh and roughly chop.
Cook the pork
4

• When the fries have 10 minutes remaining, heat a large frying pan over medium-high heat.
• Cook pork mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes.
• Reduce heat to medium, then add Tex-Mex spice blend and tomato paste. Cook, stirring until fragrant, 1 minute.
• Add the water and simmer until slightly thickened, 1 minute. Season to taste with salt and pepper.

Toss the salad
5

• In a large bowl, combine cos and avocado with a drizzle of olive oil and white wine vinegar. Season to taste.

Finish & serve
6
  • Bring everything to the table.
  • Build your own plate with fries, Texan pork, avo salad, tomato, charred onion, shredded Chedddar cheese and smokey aioli to serve. Enjoy!
