• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries, then place on a lined oven tray. • Drizzle with olive oil, season with salt and toss to coat. Bake until tender, 20-25 minutes. • In the last 5 minutes of cook time, remove potatoes from oven. Sprinkle with grated Parmesan cheese and bake until golden and crispy.

• When the fries have 5 minutes remaining, combine thyme, a good pinch of salt and pepper and a drizzle of olive oil in a medium bowl. Add beef strips and toss to coat. • Wash and dry the frying pan, then return to high heat with a drizzle of olive oil. • When oil is hot, cook beef strips in batches until browned and cooked through, 1-2 minutes. Transfer to a plate.
