Cooking Steps

• Preheat oven to 240ºC/220ºC fan-forced. • Peel kumara and cut into wedges. TIP: Leave the kumara unpeeled if you prefer.

• Place kumara on a lined oven tray. Sprinkle with All-American spice blend, drizzle with olive oil and season with salt. Toss to coat. • Add a splash of water to the tray, then roast kumara until tender and golden, 20-25 minutes. TIP: If your oven tray is crowded, divide between two trays.

• While the kumara is roasting, zest lemon to get a pinch, then slice into wedges. Roughly chop coriander. • In a small bowl, combine garlic aioli, coriander, lemon zest and a squeeze of lemon juice. Season with salt and pepper.

• Transfer smokey kumara wedges to a serving plate. • Serve with lemon and herb aioli and any remaining lemon wedges. Enjoy!
