• See ‘Top Steak Tips!’ (below)! Preheat oven to
240°C/220°C fan-forced.
• Cut the potato into fries, then place on a lined
oven tray.
• Drizzle with olive oil, season with salt and toss
to coat. Bake until tender, 25 minutes.
• Remove from the oven, then sprinkle with
grated Parmesan cheese and bake until golden
and crispy, a further 5-8 minutes.

• While the fries are baking, thinly slice onion
(see ingredients) and button mushrooms.
• Pick rosemary leaves.
• In a medium bowl, combine garlic & herb
seasoning and a drizzle of olive oil. Add beef
rump, season with salt and pepper and turn
to coat.

• In a large frying pan, heat a drizzle of olive oil
over high heat. Cook mushrooms, stirring, until
golden, 3-4 minutes.
• Reduce heat to medium, then add onion and
cook, 4-5 minutes.
• Add rosemary (see ingredients), the balsamic
vinegar, brown sugar and a splash of water and
mix well. Cook until dark and sticky,
3-5 minutes. Transfer to a bowl and cover to
keep warm.

• Wipe out the frying pan, then return to
medium-high heat with a drizzle of olive oil.
• When oil is hot, cook the beef for 4-5 minutes
each side for medium-rare, or until cooked to
your liking. Transfer to a plate to rest.

• When the fries have 5 minutes cook time
remaining, bake ciabatta directly on the wire
oven rack until heated through, 5 minutes.
• Meanwhile, in a second medium bowl, combine
rocket leaves and a drizzle of balsamic vinegar
and olive oil. Season to taste.

• Slice seared steak. Slice ciabatta in half, then
spread with some garlic aioli.
• Top ciabatta with steak, caramelised onion,
mushrooms and dressed rocket leaves.
• Serve with Parmesan fries and Italian truffle
mayonnaise. Enjoy
