Preheat the oven to 220°C/200°C fan-forced. Slice the potatoes (unpeeled) into 1cm thin fries. Spread the fries over two oven trays lined with baking paper. Season with salt and pepper and drizzle with olive oil. Toss to coat, then place into the oven and bake for 25-30 minutes, or until tender. For the last 5 minutes of cook time, sprinkle with the sesame seeds, toss to coat and place back in the oven. TIP: Cut the potatoes to the correct size so they cook in the allocated time!
While the fries are baking, grate the carrot (unpeeled). Finely chop the coriander. Finely chop the garlic (or use a garlic press). Thinly slice the cucumber.
In a medium bowl, place 1/2 the garlic aioli. Add the slaw mix, carrot, coriander and crushed peanuts. Season with salt and pepper and mix well just before serving. TIP: Tossing before serving prevents the slaw from going soggy!
In a large bowl, combine the pork mince, garlic, fine breadcrumbs, soy sauce (for the patties) and egg. Using damp hands, shape the pork mixture into 5 evenly sized patties slightly larger than the size of your burger buns. Heat a drizzle of olive oil in a large frying pan over a medium-high heat. Add the pork patties and cook for 5-6 minutes on each side, or until cooked through.In a small bowl, combine the water, sweet chilli sauce and soy sauce (for the glaze). When the patties are cooked, remove the pan from the heat and add the glaze to the pan. Turn the patties to coat in the glaze. TIP: Cook the burgers in batches if your pan isn't big enough.
While the burgers are cooking, place the bake-at-home burger buns on a wire rack in the oven for 2-3 minutes, or until heated through.
Build your burgers by adding a pork patty to the base. Top with some of the remaining garlic aioli, any remaining sweet chilli glaze from the pan, slices of cucumber and a helping of slaw. Serve with the sesame fries and remaining slaw on the side.
