•Large Frying Pan
•Baking Paper
- Preheat oven to 220°C/200°C fan-forced.
- Slice onion (see ingredients) into thick wedges.
- Halve Brussels sprouts.
- Chop broccoli (see ingredients) into large florets, then chop the stalk.
- Thinly slice fresh chilli (if using).
- In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook chicken thigh until browned, 2 minutes each side.
- Place onion, peeled pumpkin pieces and seared chicken thigh on a lined oven tray. Drizzle with olive oil, sprinkle with Asian BBQ seasoning, season with salt and toss to coat.
- Cover tightly with foil and bake for 12-14 minutes.
- Meanwhile, in a small bowl, add ginger paste, the soy sauce and a splash of water, stirring to combine. Set aside.
TIP: If your tray is crowded, divide between two trays.
- Remove from oven, remove foil, turn drumsticks and spoon over any juices.
- Drizzle ginger-soy mixture over chicken, then add broccoli, Brussels sprouts and chilli (save some for the garnish) and drizzle with olive oil.
- Bake, uncovered, until chicken is golden brown and cooked through, a further 20-25 minutes.
TIP: Chicken is cooked through when it’s no longer pink inside.
- Divide Asian chicken and green veg traybake between plates.
- Spoon any remaining sauce from the pan over chicken.
- Garnish with remaining chilli to serve. Enjoy!
