• Trim baby broccoli. Thinly slice white and light green parts of leek. Cut lemon into wedges • Heat a drizzle of olive oil in a frying pan over medium-high heat. Cook veggies, until tender, 4-5 mins • Add a squeeze of lemon juice. Toss and season. Transfer to a bowl
• Return frying pan to medium-high heat with a drizzle of oil • Cook pork until cooked through, 3-4 mins each side • In last minute of cook time, add spice blend and a splash of water. Turn to coat • Add cherry glaze and turn to coat
• Meanwhile, transfer mashed potato to a bowl. Microwave until hot and steaming, 3 mins. Season to taste • Plate up pork, greens and mash • Top with walnuts. Tear over parsley. Serve with any remaining lemon wedges.
