
Smashed avo with a spicy, zesty twist! Who doesn't love a good guacamole, It's the ultimate dip for any gathering. Dip in tortilla chips, fresh veggies, or dollop it onto your favourite meal for a creamy addition.

• Thinly slice spring onion. Finely chop coriander and parsley. Zest lemon to get a pinch and halve.

• In a medium bowl, combine coriander, parsley, a pinch of chilli flakes (if using), juice of half the lemon, a generous pinch of salt and sugar and 2 tbs olive oil. Set aside.

• Slice avocado in half and scoop out flesh. Place avocado in a small bowl and mash with a fork. • Add sour cream, spring onion, remaining lemon juice, lemon zest, the salt and the pepper, and stir to combine. Season to taste.
TIP: For a smoother guacamole, use a food processor.

• Transfer creamy guacamole to a serving bowl. Spoon over salsa verde. Enjoy!
