Cooking Steps

• Boil the kettle. Finely chop garlic and onion (see ingredients). Thinly slice pear. • Pour boiling water into a large saucepan with a pinch of salt. • Cook spaghetti in boiling water, over high heat, until ‘al dente’, 10 minutes. • Reserve pasta water (1/2 cup for 2 people / 1 cup for 4 people). Drain spaghetti, then return to saucepan with a drizzle of olive oil.

If you've doubled your prawns, follow instructions as above. Cook prawns in batches for best results.

------------------------------------------CCM TEXT---------------------------------- • In a large frying pan, heat half the butter and a drizzle of olive oil over medium-high heat. • Cook prawns, tossing, until pink and starting to curl up, 3-4 minutes (cook in batches if your pan is getting crowded). • In the last minute, add garlic and cook, tossing, until fragrant, 1 minute. • Season with salt and pepper, then transfer to a bowl. Set aside.

• Return the frying pan to medium heat with a drizzle of olive oil. Cook onion and a pinch of chilli flakes (if using) until tender, 3-5 minutes. • Add garlic & herb seasoning and cook until fragrant, 1 minute. Add diced tomatoes, the brown sugar and some reserved pasta water (1/4 cup for 2 people / 1/2 cup for 4 people). • Bring to the boil, then reduce heat to low and simmer, until slightly thickened, 4-5 minutes. Season with salt and pepper. • Remove sauce from heat, then stir in spaghetti, prawns and the remaining butter.

• In a large bowl, combine pear, mixed salad leaves, a drizzle of vinegar and olive oil. Season to taste. • Divide prawn spaghetti arrabbiata between bowls. • Sprinkle with grated Parmesan cheese. Tear over parsley to garnish and serve with pear salad. Enjoy!

TIP: Seasoning is key in this dish, so taste and season with more salt and pepper if needed.
