Cooking Steps

Boil kettle. Finely chop garlic. Trim green beans and cut into thirds. Roughly chop Asian greens. Add udon noodles to a medium heatproof bowl. Add enough boiling water to cover noodles, then set aside until tender, 2-3 minutes. Stir occasionally with a fork to separate. Drain and set aside.

While noodles are cooking, heat a large frying pan with a drizzle of olive oil to a medium-high heat. Add green beans and cook until tender, 4-5 minutes. Add Asian greens, mixed sesame seeds and garlic and cook, stirring until fragrant, 1-2 minutes. Transfer to a medium bowl. Cover to keep warm. Meanwhile, in a small bowl, combine teriyaki sauce, soy sauce, brown sugar and sesame oil.

Return the frying pan to a high heat with a drizzle of olive oil. When oil is hot, cook beef strips in batches until browned and cooked through, 1-2 minutes. Add Udon noodles and return beef to pan and cook, tossing until combined, 1-2 minutes. Add teriyaki sauce mixture and stir until combined, 1 minutes.. Season to taste. TIP: Cooking the meat in batches over a high heat helps it stay tender.

Divide the teriyaki beef with Udon noodles and garlic veggies between bowls. Serve with a dollop of mayonnaise.
