Behind every great stir-fry, there's got to be a great sauce! This one has hoisin, brown sugar and soy sauce – it's a knockout. Toss it through tofu and a medley of veggies for a fast and easy weeknight winner.

• Finely chop garlic. • In a medium saucepan, heat the butter with a dash of olive oil over medium heat. • Cook garlic until fragrant, 1-2 minutes. Add jasmine rice, the water (for the rice) and a generous pinch of salt, stir, then bring to the boil. • Reduce heat to low and cover with a lid. Cook for 12 minutes, then remove from heat and keep covered until rice is tender and water is absorbed, 10-15 minutes.
TIP: The rice will finish cooking in its own steam so don't peek!
• Meanwhile, thinly slice carrot into half-moons. • Trim green beans and cut into thirds. • Roughly chop Asian greens. • Cut plain tofu (see ingredients) into 2cm chunks. • In a small bowl, combine hoisin sauce, the soy sauce, brown sugar and water (for the sauce). Set aside.
• Heat a large frying pan over medium-high heat with a drizzle of olive oil. • Cook carrot and green beans, tossing, until softened, 3-4 minutes. • Add Asian greens and a dash of water. Cook until just wilted, 1-2 minutes. Transfer to a bowl.
• In a medium bowl, add tofu, sweet soy seasoning and the plain flour. Season with salt and pepper, then gently toss until well coated. • Return the frying pan to medium-high heat with a generous drizzle of olive oil. • When the oil is hot, cook tofu, turning occasionally, 4-5 minutes.
• Add the veggies and hoisin mixture to the tofu, tossing, until heated through, 1 minute.
• Divide garlic rice between bowls. • Top with hoisin tofu and veggie stir-fry. • Garnish with crispy shallots to serve. Enjoy!
