Cooking Steps

Bake the fries

  • Preheat oven to 240°C/220°C fan-forced.
  • Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.  
  • Bake until potato fries are tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide fries between two trays.

  • Meanwhile, peel and finely chop kiwifruit. 
  • Finely chop onion. 
  • In a medium bowl, combine venison & beef mince, fine breadcrumbs, garlic & herb seasoning and the egg. Season with pepper. 
  • Cut streaky bacon into 1cm pieces.
Make the kiwifruit salsa

  • In a second medium bowl, combine kiwifruit, onion, a pinch of chilli flakes (if using) and a drizzle of olive oil and vinegar.
  • Season to taste with salt and pepper. 
Cook the patties

  • Using damp hands, shape mince mixture into 2cm-thick patties (1 per person).
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook bacon, turning, until golden, 4-5 minutes. Transfer to a plate.
  • Return frying pan with a drizzle of olive oil over medium-high heat. Cook patties until just cooked through, 4-5 minutes each side.
  • In last 1-2 minutes of cook time, sprinkle shredded Cheddar cheese over patties and cover with a lid so cheese melts.
Heat the burger buns

  • Halve burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes.
Finish & serve

  • Drizzle vinegar over the fries and toss to coat. 
  • Spread burger buns with the mayonnaise, top with rocket leaves, cheesy venison-beef patty, bacon and kiwifruit salsa.
  • Divide cheesy venison-beef-bacon burgers and salt 'n' vinegar fries between plates to serve. Enjoy!
