Kumara

Preheat the oven to 240ºC/220ºC fan-forced. Peel kumara and cut into wedges.
TIP: Leave the kumara unpeeled if you prefer.
Place kumara on a lined oven tray. Sprinkle with All-American spice blend, drizzle with olive oil and season with salt. Toss to coat. Add a splash of water to tray, then roast the kumara until tender and golden, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
While the kumara is roasting, zest lemon to get a pinch, then slice into wedges. Roughly chop herbs. In a small bowl, combine garlic aioli, herbs, lemon zest and a squeeze of lemon juice. Season with salt and pepper.
Transfer smokey kumara wedges to a serving plate. Serve with lemon and herby aioli and any remaining lemon wedges.
