Cooking Steps

• Thinly slice fresh chilli (if using). • Zest lemon to get a pinch and slice into wedges.

• In a medium bowl, combine garlic paste, peri-peri seasoning, lemon zest, chilli and a drizzle of olive oil. Season with salt and pepper. • Add chicken thigh to marinade, turning to coat. • Cover and allow to marinate, refrigerated, for at least 20 minutes.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook chicken thigh, turning occasionally, until browned and cooked through, 10-14 minutes. • Remove from heat then add a good squeeze of lemon juice.

TIP: The marinade will char slightly in the pan, this adds to the flavour!

• Transfer peri-peri chicken to a serving plate. Serve with any remaining lemon wedges. Enjoy!
