• Preheat oven to 240°C/220°C fan-forced. Boil the kettle. • Drain and rinse black beans. Slice kernels off corn cob.

• SPICY! The spice blend is mild, but use less if you're sensitive to heat! Place pulled chicken in a baking dish, along with black beans, corn, tomato paste, Tex-Mex spice blend, the brown sugar and the water. Stir to combine. • Bake, uncovered, until slightly reduced and heated through, 20-25 minutes. • In the last 5 minutes of bake time, remove dish from oven, then sprinkle over shredded Cheddar cheese. Continue baking until melted, 5 minutes.

• Just before serving, microwave basmati rice until steaming, 2-3 minutes. Gently stir through the butter. • Divide butter rice between bowls. Top with pulled chicken and black bean bake. • Dollop over sour cream and tear over coriander(see ingredients) leaves. • Serve with corn chips. Enjoy!
