A stew on a winter night (or any night!) is the only thing you’ll need to be feeling warm and cosy. The aromas of beef and a rich saucy stew will float through your house, calling everyone to your table, so make sure there’s enough to go around!

• Finely chop celery and garlic. Roughly chop carrot. • In a medium bowl, combine diced beef, the plain flour and a pinch of salt and pepper. • In a large saucepan, heat a generous drizzle of olive oil over high heat. Cook diced beef, turning occasionally, until browned, 2-3 minutes. Transfer to a plate.
TIP: If your pan is getting crowded, cook the beef in batches to ensure it browns and doesn't stew. TIP: The flour will char slightly in the pan, this adds to the flavour!
• Return the saucepan to medium-high heat with a drizzle of olive oil. Cook carrot and celery until tender, 4-5 minutes. • Add garlic and Aussie spice blend and cook until fragrant, 1 minute.
• Add tinned cherry tomatoes, beef-style stock powder, Worcestershire sauce, the brown sugar, butter (for the sauce) and the water. Return beef to the pan and stir to combine. • Cover with a lid or tightly with foil. Reduce heat to low and simmer until beef is tender, 30-45 minutes. Season to taste.
Little cooks: Kids can help out with measuring the brown sugar and water.
• Cut wholemeal panini into slices. Toast or grill panini to your liking and spread with butter (for the panini). • Divide one-pot beef and veggie stew between bowls. Tear over parsley. • Serve with wholemeal panini. Enjoy!
