Cooking Steps

Boil the potato

  • Boil the kettle. Half-fill a medium saucepan with boiling water and add a generous pinch of salt.
  • Cut potato into bite-sized chunks.
  • Cook potato in the boiling water, over high heat, until easily pierced with fork, 12-15 minutes. Drain and return to saucepan.
  • Season to taste and transfer to serving bowls, covering to keep warm.

  • Grate apple.
  • In a medium bowl, combine beef mince, Nan's special seasoning, fine breadcrumbs and the egg.
  • Using damp hands, roll heaped spoonfuls of beef mixture into small meatballs (6-8 per person). Transfer to a plate. 
Start the meatballs

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Add meatballs, turning, until browned and cooked through, 8-10 minutes (cook in batches if your pan is getting crowded). 
Braise the cabbage

  • While the meatballs are cooking, return saucepan to medium-high heat. Cook shredded cabbage mix, apple, the brown sugar, balsamic vinegar and the water, stirring occasionally, until softened, 4-5 minutes.
  • Transfer to a bowl and cover to keep warm.
Make it saucy

  • To pan with meatballs, reduce to low heat and add the water (for the sauce), light cooking cream and vegetable stock powder and cook until the sauce has slightly thickened, 1-2 minutes. 
Finish & serve

  • Divide Konigsberger-style beef meatballs, boiled potatoes, and braised cabbage between plates. Tear over parsley to serve. Enjoy
