  • Preheat oven to 240°C/220°C fan-forced.
  • Place potato fries on a lined oven tray. Drizzle with olive oil, season with salt, sprinkle with a pinch of dried oregano and toss to coat.
  • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

  • Meanwhile, slice tomato into thin wedges.
  • In a small bowl, combine Greek-style yoghurt and dill & parsley mayonnaise. Season and set aside.
  • In a medium bowl, combine pork mince, paprika spice blend, fine breadcrumbs and the egg.
  • Using damp hands, roll heaped spoonfuls of pork mixture into small balls (4-5 per person). Transfer to a plate.

  • When the fries have 10 minutes remaining, in a large frying pan, heat a drizzle of olive oil over medium-high heat. Add keftedes, turning, until browned and cooked through, 8-10 minutes (cook in batches if your pan is getting crowded).
  • Microwave pita bread on a plate for 1 minute, until warmed through.

  • In a large bowl, combine mixed salad leaves, tomato, a drizzle of olive oil and vinegar. Season to taste.
  • Halve pita breads.
  • Divide oregano fries, pork keftedes, tomato salad and fluffy pita bread between plates. Serve with dill-yoghurt sauce. Enjoy!
