Cooking Steps

Make the creamy beans

  • Drain and rinse cannellini beans.
  • Finely chop garlic. Roughly chop parsley (including stalk). 
  • In a large bowl, lightly crush cannelini beans.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook garlic until fragrant, 1 minute.
  • Transfer garlic oil to the bowl with the beans and add natural yoghurt, Dijon mustard, and parsley. Drizzle with olive oil, vinegar and season generously with salt and pepper. Set aside
Sear the chicken

  • Return frying pan to medium-high heat with a drizzle of olive oil. 
  • Add herby marinated chicken thigh and cook, turning occasionally, until browned and cooked through, 14-16 minutes.
    TIP: Chicken is cooked through when it's no longer pink inside.
Prep & toss the salad

  • Thinly slice celery. Thinly slice apple into wedges.
  • In a large bowl, combine mixed salad leaves, celery, apple and a drizzle of olive oil and vinegar. Season to taste.

TIP: Toss the salad just before serving to keep the leaves crisp.

Finish & serve

  • Divide creamy smashed cannellini beans, apple & celery salad and herby chicken between plates. Enjoy!
