• Preheat the oven to 240°C/220°C fan-forced. Cut the potato into bite-sized chunks.
• Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. Roast until tender, 15 minutes.
• Remove the tray from the oven and add the diced bacon to the potato, then roast until golden, 10-12 minutes (you may need to break up the bacon with your hands!).
• Meanwhile, slice cucumber into sticks. Thinly slice radish. Slice lemon into wedges.
• Cut chicken breast into 2cm chunks. • In a medium bowl, combine chicken, sweet soy seasoning, sesame seeds and a drizzle of olive oil.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. When oil is hot, cook chicken, turning occasionally, until browned and cooked through, 5-6 minutes. Transfer to a plate. TIP: Chicken is cooked through when it's no longer pink inside.
• Meanwhile, combine mixed salad leaves, radish, cucumber, the sesame oil and a generous squeeze of lemon juice in a large bowl. Season to taste. • Place bao buns on a plate with a small splash of water (just a small splash so they stay fluffy!). • Cover with cling wrap or a microwave-safe bowl. Microwave on high, 1 minute. Set aside to slightly cool, 1 minute.
• Gently halve bao buns and evenly spread with some garlic aioli. • Fill bao buns with sweet soy chicken and some cucumber salad. Tear over coriander. • Serve with bacon wedges, and any remaining cucumber salad and garlic aioli. Enjoy!
