
Fries are definitely a family fave side, but what if you made them the base of your dinner? Skip the nachos chips and instead, load up your potato fries with all your favourite toppings like Tex-Mex beef, fresh radish, cos, pickled onion and of course cheese and our favourite condiment; smokey aioli!

1 drizzle

water
1 drizzle
white wine vinegar

TIP: If your oven tray is crowded, divide between two trays.

• Meanwhile, thinly slice red onion (see ingredients).
• In a small bowl, combine the white wine vinegar and a good pinch of sugar and salt.
• Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside.

TIP: Cover the pan with a lid if the kernels are “popping” out.

• When the fries have 10 minutes remaining, return the frying pan to medium-high heat.
• Cook beef mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes.
• Reduce heat to medium, then add Tex-Mex spice blend and tomato paste. Cook, stirring until fragrant, 1 minute.
• Add the water, then simmer until slightly thickened, 1 minute.
• Season to taste with salt and pepper.


• Bring everything to the table.
• Build your own plate with Texan-spiced beef, fries, radish, cos, charred corn, pickled onion, shredded Cheddar cheese and smokey aioli to serve. Enjoy!
