
Fries are definitely a family fave side, but what if you made them the base of your dinner? Skip the nachos chips and instead, load up your potato fries with all your favourite toppings like Tex-Mex lamb, fresh radish, cos, pickled onion and of course cheese and our favourite condiment; smokey aioli!

TIP: If your oven tray is crowded, divide between two trays.

• When the fries have 10 minutes remaining, return the frying pan to medium-high heat.
• Cook lamb mince (no need for oil!), breaking up with a spoon, until just browned, 4-5 minutes.
• Reduce heat to medium, then add Tex-Mex spice blend and tomato paste. Cook, stirring until fragrant, 1 minute.
• Add the water, then simmer until slightly thickened, 1 minute.
• Season to taste with salt and pepper.


• Bring everything to the table.
• Build your own plate with Texan-spiced lamb, fries, radish, cos, charred corn, pickled onion, shredded Cheddar cheese and smokey aioli to serve. Enjoy!
