Heat a large frying pan over a medium-high heat. Toast the shredded coconut, stirring occasionally, until golden, 2-3 minutes.
Meanwhile, drain the tinned mango and roughly chop.
In a serving bowl, add a layer of toasted vanilla almond muesli, then pour some soy milk. Top with mango and toasted coconut to serve
TIP: Store any leftover muesli in an airtight container!
