
Bring some veggie vibrance to your table courtesy of herby, delicately roasted capsicum, courgette and pumpkin. Add a sprinkle of parsley for some added colour and depth.

• Preheat oven to 220°C/200°C fan-forced. • Slice courgette into rounds. Cut capsicum into bite-sized chunks.
• Place courgette, capsicum and peeled & diced pumpkin on a lined oven tray. • Sprinkle with garlic & herb seasoning, drizzle with olive oil, season with salt and toss to coat. • Roast until tender, 20-25 minutes.
• Roughly chop parsley. • When veggies are done, sprinkle with parsley and toss to coat.
• Place Mediterranean roast veggies on a serving plate. Enjoy!
