• Slice chicken horizontally to make 2 thin steaks • In a bowl, combine chicken and mayo • In a shallow bowl, add breadcrumbs and season • Dip chicken into breadcrumbs. Turn to coat • Heat olive oil in a frying pan over medium-high heat • Cook chicken until golden, 3-5 mins each side

• Top chicken with sugo and sprinkle with cheese • Remove from heat, cover and let cheese melt • Chop tomato and cucumber • In a bowl, combine salad leaves, tomato and cucumber • Add dressing. Toss and season

• Prick a few holes in potato packet • Microwave potatoes until soft and steaming, 4-5 mins • Plate up chicken, potatoes and serve with salad
