1 tsp

1 drizzle
vinegar (balsamic or white wine)
2 tbs
Mayonnaise
(Contains: Eggs)

• Preheat oven to 240°C/220°C fan-forced. • Cut potato into wedges. Cut bacon into 1cm pieces. • Place wedges on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Bake until just tender, 20 minutes.

• Remove tray from oven and sprinkle bacon and Parmesan cheese over wedges. • Bake until wedges are tender and cheese is melted, a further 7-10 minutes.

• Meanwhile, thinly slice apple into wedges. • Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks. • In a shallow bowl, combine the plain flour and salt. In a second shallow bowl, whisk the egg. In a third shallow bowl, place panko breadcrumbs. • Dip chicken steaks into flour mixture to coat, then into egg, and finally in crumbing mix. Set aside on a plate.

• When the wedges have 10 minutes remaining, in a large frying pan, heat enough olive oil to coat the base over high heat. • Cook crumbed chicken in batches until golden and cooked through, 3-5 minutes each side. Transfer to a paper towel-lined plate. TIP: Add extra oil if needed so the crumbed chicken doesn't stick to the pan! TIP: Chicken is cooked through when it's no longer pink inside.

• In a large bowl, combine the honey and a drizzle of vinegar and olive oil. Add mixed salad leaves and apple then toss to coat. Season.

• Slice chicken. • Divide crumbed chicken, Parmesan bacon wedges and apple salad between plates. • Serve with mayonnaise. Enjoy!
