
A punchy, crunchy and crisp Asian slaw is just the thing we're looking for to feel rejuvinated. The ponzu dressing is our favourite part, it brings in rich flavours that make our mouths water.

• Slice cucumber into half-moons. Roughly chop baby spinach leaves. Thinly slice fresh chilli (if using).

• In a medium bowl, combine Japanese dressing, ponzu sauce and a drizzle of olive oil.

• Add Asian slaw mix to the dressing, along with baby spinach and cucumber. Tear over coriander and toss to combine.

• Divide crunchy Asian slaw between bowls. Drizzle over sesame dressing. • Top with roasted peanuts, crispy shallots and chilli. Enjoy!
