• Preheat oven to 240°C/220°C fan-forced. Cut potato into wedges. • Place on a lined oven tray. Drizzle with olive oil, sprinkle over the garlic & herb seasoning, season with salt and toss to coat. Spread out evenly, then bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.

• Meanwhile, thinly slice tomato. • In a medium bowl, combine the slaw mix, coriander, mayonnaise and a drizzle of white wine vinegar. Season to taste.

SPICY! The spice blend is hot, use less if you're sensitive to heat.
• In a medium bowl, combine beef mince, the egg, fine breadcrumbs, Mexican Fiesta spice blend and a generous pinch of salt. Shape beef mixture into evenly sized patties slightly larger than your burger buns. You should get 1 patty per person. • Heat a large frying pan over a medium-high heat with a drizzle of olive oil. Cook beef patties until just cooked through, 4-5 minutes each side.

• While the patties are cooking, bake burger buns directly on a wire oven rack until heated through, 3 minutes. • Slice burger buns in half. Top buns with slaw, a Mexican beef patty and some tomato. • Serve with garlic and herb potato wedges.
