- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, in a medium bowl, combine the vinegar and a good pinch of sugar and salt.
- Add cucumber to pickling liquid. Add enough water to just cover cucumber. Set aside.
TIP: Slicing the cucumber very thinly helps it pickle faster!"
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook onion, stirring regularly until softened, 5-6 minutes.
- Reduce heat to medium. Add the balsamic vinegar, brown sugar, a splash of water and mix well. Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl
- Thinly slice onion and spring onion.
- Roughly chop tomato.
- When the onion is done, wipe out frying pan and return to high heat.
- Cook beef mince (no need for oil!), breaking up with a spoon, until just browned, 4-5 minutes.
- Add Kiwi spice blend and cook until fragrant, 1 minute.
- Sprinkle grated mozzarella over beef mixture and cover with a lid so cheese melts, 1-2 minutes.
- Drain pickled cucumber and finely chop.
- Divide fries between plates. Top with cheesy beef mixture, tomato and pickled cucumber. Sprinkle over mixed sesame seeds and spring onion. Drizzle over garlic aioli and hot sauce (if using) to serve. Enjoy!
