- Boil the kettle.
- Half-fill a large saucepan with boiling water and add a generous pinch of salt.
- Cook orecchiette (see ingredients) over high heat, until ‘al dente’, 11 minutes.
- Reserve pasta water (2 tbs per person). Drain orecchiette, then return to saucepan and drizzle with olive oil.
- Meanwhile, trim cos lettuce (see ingredients), then roughly tear leaves.
- Thinly slice radish.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- When oil is hot, cook diced chicken, tossing occasionally, until browned and cooked through, 5-6 minutes. Add garlic & herb seasoning and cook until fragrant, 1 minute.
- Reduce heat to medium, add cream (see ingredients) and the reserved pasta water and cook until slightly thickened, 1-2 minutes.
- Remove pan from heat, then stir through grated Parmesan cheese and cooked pasta until cheese is melted and pasta is coated. Season generously with pepper.
- Spread sliced sourdough with the softened butter, then fill with chicken mac n' cheese and mozzarella cheese.
- Heat toastie in a sandwich press for 2-3 minutes, until golden brown and cheese is melted.
- While the sandwich is toasting, in a large bowl, combine cos lettuce, radish and Caesar dressing. Season to taste.
- Halve toasties.
- Divide loaded chicken mac n' cheese toasties and cos salad between plates to serve. Enjoy!
