• Trim baby broccoli. • Halve any thicker stalks of baby broccoli lengthways. • Roughly chop Asian greens. • Finely chop garlic. • Thinly slice fresh chilli.
• Place beef rump between two sheets of baking paper. Pound beef with a meat mallet or rolling pin until slightly flattened. Season beef with salt and pepper. • In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef, turning, for 5-6 minutes (depending on thickness), or until cooked to your liking. • Transfer to a plate to rest.
TIP: Pounding the beef ensures that it's extra tender once cooked. TIP: Cook in batches if your pan is getting crowded.
• Wipe out frying pan then return to medim-high heat with a drizzle of olive oil. • Cook baby broccoli, tossing, until tender, 5-6 minutes. • Add Asian greens and garlic, and cook until slighlty wilted and fragrant, 1-2 minutes. Season to taste.
• In a small heatproof bowl, microwave honey-soy sauce and the vinegar, in 30 second bursts, until warmed through. Stir through any steak resting juices. • Slice steak. • Divide honey-soy beef steak and green veg stir-fry between plates. • Spoon over honey-soy sauce and tear over coriander. • Sprinkle chilli (if using) to garnish.
