Cooking Steps

GET PREPPED
1

Bring a large saucepan of salted water to the boil. Preheat the grill to high. Peel the kumara and chop into 2 cm chunks. Chop the broccoli florets into 2 cm pieces. Finely chop the brown onion. Finely chop the carrot (unpeeled). TIP: Keep the skin on the carrot to retain the nutrients! Finely chop the celery. Grate the Cheddar cheese.

MAKE THE KUMARA-BROCCOLI MASH
2

Add the kumara to the boiling water and cook for 10-15 minutes, or until easily pierced with a knife. In the last 3 minutes of kumara cooking time, add the broccoli florets and cook until soft. Drain and return to the saucepan. Add the milk, the butter and a pinch of salt and pepper and mash with a potato masher or fork until smooth. Set aside and cover with a lid to keep warm.

COOK THE BEEF MINCE
3

While the kumara is cooking, heat a drizzle of olive oil in a large frying pan over a medium-high heat. Add the brown onion, the Mediterranean spice blend, the carrot and the celery and cook for 4-5 minutes, or until soft and fragrant. Add the beef mince and cook for 4-5 minutes, breaking up with a wooden spoon, until browned and cooked through.

MAKE IT SAUCY
4

Add the tomato paste and the warm water (check the ingredients list for the amount) to the pan with the beef and stir to combine. Crumble in the beef stock cube and simmer for 5 minutes, or until the sauce thickens slightly. Season to taste with a pinch of salt and pepper.

GRILL THE BEEF PIE
5

Spoon the beef mince mixture into a medium baking dish and top with the kumara-broccoli mash. Sprinkle over the Cheddar cheese and place under the grill for 5 minutes, or until the cheese is melted.

SERVE UP
6

Divide the beef cottage pie between plates and season with a pinch of salt and pepper.
