- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, thinly slice courgette into strips lengthways. Zest lemon to get a generous pinch, then slice into wedges
- Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook courgette until tender, 2-4 minutes each side.
- Transfer to a plate and cover to keep warm.
- Return frying pan to medium-high heat, with a drizzle of olive oil.
- Cook chicken steaks until cooked through, 3-5 minutes each side (cook in batches if your pan is getting crowded).
- In the last minute of cook time, sprinkle over Mediterannean spice blend, turning chicken to coat.
TIP: The chicken is cooked when it is no longer pink inside.
- Bake pita bread directly on a wire oven rack until heated through, 2-3 minutes.
- To tray with fries, add lemon zest and the pepper, tossing to coat.
- Thinly slice chicken.
- Fill pita bread with some garlic dip, grilled courgette, mixed salad leaves, sliced chicken breast and a good squeeze of lemon juice.
- Serve with lemon pepper fries and any remaining veggies. Enjoy!
