Preheat the oven to 240°C/220°C fan-forced. Cut the potato into fries and place on a lined oven tray. Sprinkle over the garlic & herb seasoning, drizzle with olive oil, season with salt and toss to coat. Bake until just tender, 20-25 minutes. In the last 5 minutes of cook time, remove from the oven, then sprinkle with the shredded Cheddar cheese and bake until golden and crispy, 5 minutes.

While the fries are baking, roughly chop the cucumber. Thinly slice the apple. Finely chop the garlic.

In a medium bowl, combine the beef mince, fine breadcrumbs (see ingredients), Nan's special seasoning, garlic, egg, and a pinch of salt. Using damp hands, roll heaped spoonfuls of the beef mixture into meatballs, then flatten into 2cm-thick rissoles. Transfer to a plate. You should get 3-4 rissoles per person.

Heat a large frying pan over a medium-high heat with a drizzle of olive oil. Cook the beef rissoles, in batches, turning, until browned and cooked through, 3-4 minutes.

In a second medium bowl, combine the balsamic vinegar and a drizzle of olive oil, then season with salt and pepper. Add the mixed salad leaves, apple and cucumber. Toss to coat.

Divide the homestyle beef rissoles, cheesy fries and apple salad between plates. Serve with the dill & parsley mayonnaise.
