• In a large bowl, add cream and vanilla-flavoured essence. • Roughly chop strawberries.
• Using electric beaters, whisk vanilla cream mixture until soft peaks form and almost doubled in size, 1-2 minutes.
TIP: If you don't have an electric beaters, use a hand whisk and whisk for 3-4 minutes! TIP: Chill both your bowl and cream before whipping to produce a larger increase in volume!
• Using your hands, break up meringue nests into large chunks and arrange on a serving platter.
• Dollop cream on top of meringue chunks. • Top with some berry compote and scatter over strawberries to serve. Enjoy!
