Cooking Steps

Cook the chicken

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When oil is hot, cook chicken breast strips, tossing, in batches until browned and cooked through, 4-5 minutes. 
  • Add Tex-Mex spice blend and tomato paste and cook until fragrant, 1 minute.
  • Remove pan from heat and stir through a splash of water. Season to taste. TIP: The chicken is cooked when it is no longer pink inside.
Get prepped & assemble the wrap

  • Meanwhile, roughly chop tomato.
  • Microwave large wraps on a plate in 10 second bursts until warmed through.
  • Spread the middle of the wraps with light sour cream then top with chicken mixture, tomato, baby spinach leaves, some corn chips and Cheddar cheese, leaving a 4cm boarder around the edges.
  • Fold the edges of the wrap over the filling to form a hexagon shape, pressing gently to seal.
Toast the wrap

  • Heat wrap in a sandwich press for 2-3 minutes, until warmed through and cheese is melted.
Finish & serve

  • Cut cheese chicken crunch wrap supreme in half.
  • Serve with remaining corn chips. Enjoy!
