Vanilla-Flavoured Essence
(May be present: Wheat, Gluten, Milk, Almond, Cashew, Sesame, Soy, Fish, Eggs. )
• Preheat oven to 220ºC/200ºC fan-forced. • Peel and finely chop apple and pear. • Heat a large frying pan over medium-high heat. Cook apples, caster sugar (see ingredients) and the cinnamon, stirring until softened and reduced, 6-7 minutes. Transfer to a bowl and allow to cool
• To a small heatproof bowl, add the butter and microwave in 10 second bursts until melted. • Place 1 sheet of filo on a flat surface. Drizzle over with some butter, then top with another sheet of filo. Repeat layering with the remaining pastry. • Spoon apple mixture along the long edge of the pastry, leaving a 3cm border at the short ends. Fold ends in and roll to make a log. • Brush top of strudel with the remaining butter. Bake until the pastry is golden, 20-25 minutes. Allow to cool for 10 minutes.
• Meanwhile, using electric beaters, whisk cream and vanilla flavoured essence in a large bowl or jug until soft peaks form and almost doubled in size, 1-2 minutes. TIP: If you don’t have electric beaters, use a hand whisk and whisk for 3-4 minutes!
• Slice cinnamcn apple & pear strudel. Serve with vanilla whipped cream. Enjoy!
