Cooking Steps

Get prepped
1

• Cut parsnip and carrot into bite-sized chunks.
• Thinly slice celery.
• Pick thyme leaves.

Little cooks: Help pick the thyme leaves from the stalk!

Start the stew
2
  • In a large saucepan, heat a drizzle of olive oil over over high heat. When oil is hot, cook beef strips, tossing, in batches until browned and cooked through, 1-2 minutes. Transfer to a plate.
  • Return saucepan to medium-high heat with a drizzle of olive oil, cook carrot, sliced leek and parsnip tossing occasionally, until browned and cooked through, 5-6 minutes.
  • Return cooked beef to the pan, add thyme and garlic & herb seasoning and cook until fragrant, 1 minute.

TIP: Cooking the meat in batches over a high heat helps it stay tender.

Bring it all together
3
  • Reduce heat to medium-low, then add chicken-style stock powder, the water, salt and steamed potatoes.
  • Simmer, until slightly reduced and potatoes are easily pierced with a fork, 10-12 minutes.
  • Season generously with salt and pepper.
Finish & serve
4
  • Divide one pot hearty Irish beef stew between bowls. Tear over parsley to serve. Enjoy!
