- Preheat oven to 240°C/220°C fan-forced.
- Place potato fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, finely chop garlic and parsely.
- Zest lemon to get a pinch, then slice into wedges.
- Chop broccoli (including stalk!) into small florets.
- In a small bowl, combine lemon zest, panko breadcrumbs (see ingredients), a good drizzle of olive oil, parsley and a pinch of salt and pepper. Set aside.
- Cut deep slices, taking care to not slice all the way through, across chicken breast in 1cm intervals.
- Place chicken on second lined oven tray spread half the mayonnaise over the top of the chicken.
- Spoon over panko crumb mixture, gently pressing down so it sticks.
- Roast until chicken is cooked through and the crumb is slightly golden, 12-16 minutes.
- Add broccoli and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
Microwave broccoli on high until just tender, 2-4 minutes.
Drain broccoli, then return to the bowl with a good squeeze of lemon juice. Season and cover to keep warm.
TIP: Chicken is cooked through when it is no longer pink inside.
- Divide herb crusted chicken, chips and steamed broccoli between plates.
- Serve with any remaining lemon wedges and the remaining mayonnaise to serve. Enjoy!
