Cooking Steps

1
1

• Preheat oven to 240°C/220°C fan-forced. • Cut carrot, courgette and beetroot into fries. • Place veggie fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide the fries between two trays.

2

• Meanwhile, thinly slice onion and radish. • Place your hand flat on top of chicken and slice through horizontally to make two thin steaks. • Combine Aussie spice blend and a drizzle of olive oil in a medium bowl. Add chicken and turn to coat.

3
3

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook onion, stirring regularly, until softened, 5-6 minutes. • Reduce heat to medium, then add the balsamic vinegar, the brown sugar and a splash of water. Mix well. Cook until dark and sticky, 3-5 minutes. • Remove pan from heat, add onion chutney and a splash of water and stir to combine. Transfer to a bowl.

4
4

• Wipe out and return frying pan to medium-high heat with a drizzle of olive oil • Cook chicken steaks until cooked through, 3-5 minutes each side (cook in batches if your pan is getting crowded). Transfer to a plate.

TIP: The chicken is cooked when it is no longer pink inside.

5
5

• While the chicken is cooking, in a second medium bowl, combine a drizzle of white wine vinegar and olive oil. • Season, then add spinach & rocket mix. Toss to combine.

6
6

• Slice spiced chicken. • Divide chicken, veggie fries and radish salad between plates. • Top chicken with caramelised onion sauce. Enjoy!
